Trust me! That's not the case. Guess it's time to lay down the details of my Chana Masala recipe for all you home cooks who are crazing a bit of Indian warmth during the winter months.
I used 100% chard in this recipe. Just be sure to trim out the hard ribs. Then chop the leaves into smaller pieces. Chard needs a longer cooking time than spinach. In fact, I knew I'd be late to get into the kitchen last night so I cooked the Saag until everything softened and then re-heated it again a couple hours later when we finally had time to eat.
If you don't have time to make or find paneer--making it is easy. More on that later. You can use feta as an okay substitute. Sure, it's not authentic, but sometimes getting fresh healthy food on the table is more important than authenticity. I know! I don't seem like someone who'd do this, and hey, some days get crazy in my life, too.
